Strange things are afoot at the Circle K; I took a veto week from LOST and Crêpes. Though,we did celebrate our weekly viewing of course! We recreated the breakfast scene between Ben and Kate, and enjoyed an old world meal while eagerly learning about Ricardo’s past.
I also feel like I should offer a blanket apology for the overall lack of decent pictures, decent posts, and decent recipes. Though training @ jetBlue is complete, (I have the diploma to prove it) and my normal working schedule has begun, I however, can’t admit quite yet that I have adjusted to my new responsibilities.
I actually have a lot of experience dealing with frustrated people. I managed apartments for 6 years, and I get it! I’ve even done my own fair share of yelling and arguing and accusing over the phone, hassling over a bill or a charge or an unexpected what have you; but never, never have I personally attacked.
I totally froze; I forgot the three strikes rule; I forgot I had a voice. I simply kept repeating how much I wanted to help him. What made matters worse was the fact that his problem was due solely to the fact that he couldn’t locate his confirmation number on his itinerary; even his extensive training as a Dr., which he didn’t fail to bring up more than 10 times in as many minutes, couldn’t help him locate the 6 letter code.
Chocolate Chocolate Mint Cookies
½ cup butter
½ cup shortening
1 cup brown sugar
½ cup white sugar
Cream together until smooth
1 teaspoon vanilla
1 teaspoon mint extract
Mix until eggs are incorporated and mixture lightens
Melt 8oz chocolate, ¼ cup water, ¼ teaspoon mint extract
Stir until mixture is combined
Add to batter
2 ¾ cups flour
1 teaspoon salt
1 teaspoon baking powder
1 cup chocolate chips, or chocolate shavings
Stir just until flour is incorporated
Bake at F350°, 9-11 minutes
Transfer and cool on wire rack
