My favorite mint ice cream is my very own fresh strawberry mint ice cream, but if I had to choose something from the store? I’d go with Ben & Jerry’s Mint Chocolate Cookie. So many mint chip ice creams have an imbalance of chocolate, the chips are overpowering, or even worse – waxy! The combination of cookies and mint is perfect. 

But like I said, no store bought ice cream holds a candle to fresh mint ice cream made with fresh mint leaves. The mint flavors the cream in such a pure way that you would swear the cream came out of the cow tasting that fresh and smooth.  

The taste is so delicate and clean. It’s the evolution of mint ice cream, and it’s the #1 reason why you’ll love this fresh strawberry mint ice cream. 

Fresh Strawberry Mint Ice Cream

There are so many options when it comes to making your own fresh mint ice cream. You can add cookies, like Ben & Jerry’s, or you can add classic chocolate shavings known the world over. I like to add strawberries to make a fresh strawberry mint ice cream. 

The combination of strawberries and mint is a summer favorite. The mint is a refreshing way to cool down on a summer’s day, but mint doesn’t have to be reserved for drinks. It’s a beautiful pairing for ice cream too. 

Custard Base

This is a custard base ice cream, smooth, creamy, and soft. First you emulsify the mint with the cream by bringing it to boil over low heat, and then steeping the leaves like tea for several hours. The resulting flavor is exquisite. 

The recipe itself only requires 5 ingredients plus a pinch of salt.

Fresh Strawberry Mint Ice Cream

Equipment

  • Ice Cream Maker

Ingredients
  

  • 1 cup heavy whipping cream
  • ¾ cup milk
  • 2 cups cut mint leaves
  • ¾ cup sugar
  • 2 egg yolks
  • pinch salt
  • 8 oz. strawberries diced

Instructions
 

  • Finely dice mint leaves
  • Add to milk and cream and bring to a boil over low heat
  • Remove from heat and allow to steep for a minimum of one hour, covered
  • Strain cream through cheesecloth into a medium size bowl, squeezing to get all the flavor out
  • I like to add a few additional fresh diced leaves to the mixture
  • Add half the liquid back to the saucepan
  • Bring cream to a low boil
  • Whisk eggs, salt and sugar into the remaining liquid off heat
  • Slowly pour into the hot cream, stirring constantly
  • Cook just until the mixture begins to thicken
  • Remove from heat and allow to cool
  • Transfer to the fridge until chilled through
  • Churn according to manufacturer’s instructions
  • 5 minutes before churning is complete, add strawberries, or fold in after finished

What Color Will This Ice Cream Be?

Depending on how long you steep your leaves, this Fresh Strawberry Mint Ice Cream will be a barely imperceptible shade of green.

Should I Use Peppermint or Spearmint?

Peppermint is likely what you’ll find at the store, whereas Spearmint is likely what you’ll find growing in your garden. 

You can use either one!

Spearmint is a hardy perennial and will come back year after year. I highly recommend growing it. It’s extremely forgiving and nearly impossible to kill.

Pick a partly shady spot in your yard and you’ll have mint all year round (unless you live in extremely northern climates). 

What is Your Favorite Ice Cream Maker?

I used to love my Grandma’s old rock salt ice cream maker. It always felt like I was a pioneer slaving away, crouched over a stool watching the ice cream churn while my ear drums throbbed over the pulsating screeching. 

I’d add more ice and more rock salt making a mess all over the place while my hands burned from the cold and salt. You could never do it inside or it would ruin everything. That’s what they call gourmet these days.

Until I realized there was a much better way.

I love my Cuisinart 1.5 Quart Ice Cream Maker

I’ve had my Cuisinart for 6 years now. It still works amazing, and the bowl only takes about 24 hours to freeze. During summer, it has a permanent place in my freezer and it’s compact enough that it doesn’t take up too much space.

Can I Make This Ice Cream Without an Ice Cream Maker?

Yes!

You’ll make the recipe according to the instructions.

Once chilled, transfer the cream base to a large mixing bowl and place in the freezer. Mix with an electric hand beater for 1 minute, every 30 minutes until frozen completely.

Make sure to set a timer! If you forget, your ice cream will completely freeze and you won’t be able to properly “churn” it.
