Strawberry Cheesecake Cake is one of my favorite desserts. This cake is made up of 5 distinct layers; 2 of the most fluffy white cakes you’ll ever eat, 1 in the center of a deliciously smooth cheesecake, and 2 more of sliced strawberries to sweeten every single morsel of this beautiful cake.

#1. This is the Best White Cake You Will Ever Eat

This cake is white and fluffy like clouds. If you pressed it between your fingers it would just float away. 

I have never in my life tasted a cake this good before. 

Don’t confuse this white cake with angel food sponge cake. Angel food cake is spongy. The sugar crystallizes to the egg whites creating a meringue cake, but it still has a density to it where each bite requires chewing. 

This white fluffy cake is like cotton candy. It’s super yummy with a great flavor that tastes like pure sweetened milk.

#2. Strawberry Cheesecake Cake is Absolutely Beautiful

The only thing that could make this cake more beautiful would be more red strawberries. I made this at the beginning of the season, but as summer gets closer, the color of the strawberries in this cake will just get better and better.

Each layer of this cake looks like a flowering petal. The strawberries form a skirt around the cake so instead of covering it with frosting, leave it naked so the strawberries peek out from each layer. 

The contrasting colors of white, golden brown and red together create an elegant centerpiece and beg to be eaten!

#3. It Tastes like Strawberries and Cream with Cake

The strawberries germinate in the whipped cream frosting of this cake and within a half hour start to leak out their juices. The juices begin seeping into each layer of cake, frosting and cheesecake and then blend together to make a delicious cake that is both delicious separate and together.

How to Make this Cake 

  1. Make the cheesecake in advance and freeze it for a minimum of 24 hours
  2. Bake the white cake and let cool completely 
  3. Make the whipped cream frosting
  4. Slice 32 oz. of whole strawberries into equal slices. First trim off the stem, and then lay the strawberry flat where the stem used to be. Cut each strawberry in half, and then each half in half again. 
  5. Assemble the cake starting with the first layer of white cake. 
  6. Cover the cake with a thick layer of frosting and then sliced strawberries starting from the outer edge and moving inward. 
  7. Place frozen cheesecake upside down over the layer of strawberries. 
  8. Cover the cheesecake with a thick layer of frosting and then sliced strawberries starting from the outer edge and moving inward. 
  9. Finish with the second layer of white cake and repeat with frosting and strawberries.

Ingredients
  

Cheesecake

  • 16 oz. cream cheese
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 1 teaspoon lemon juice
  • 2 eggs
  • cup flour

White Cake

  • ½ cup butter
  • ½ cup sunflower oil
  • 2 cups white sugar
  • 2 egg whites
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup yogurt
  • ½ cup milk
  • 3 tablespoons vinegar
  • 2 egg whites beaten to stiff peaks

Whipping Cream Frosting

  • 16 oz. powdered sugar
  • ½ teaspoon vanilla
  • ½ cup liquid whipping cream
  • 32 oz. whole fresh strawberries

Instructions
 

Cheesecake

  • Preheat oven to Fahrenheit 300°
  • Line a 9” springform pan with a layer of parchment paper, ungreased
  • Beat cream cheese on high until soft
  • Add sugar, vanilla and lemon juice until thick and creamy
  • Add eggs, one at a time until well mixed
  • Finish with flour
  • Pour into springform pan and cook for 45 minutes
  • Remove from oven and let cool completely
  • Loosen outer rim and separate cake from the pan
  • Freeze cheesecake on the bottom removable pan
  • After 24 hours, once the cheesecake is frozen completely separate cheesecake from the bottom liner
  • Cover with plastic wrap and place back in the freeze until ready to use

White Cake

  • Preheat oven to Fahrenheit 350°
  • Grease and line two 9” cake pans
  • Cream butter, oil and sugar until soft and creamy
  • Add 2 egg whites and vanilla and beat mixture until it has increased in volume
  • Slowly mix in flour, alternately with yogurt, just until mixed in
  • Finish with milk and vinegar, again stirring just to combine
  • In a clean separate bowl, beat remaining two egg whites until stiff peaks
  • Gently fold into batter
  • Pour batter into two prepared pans, dividing the batter evenly
  • Bake for 25 minutes, until cake is golden brown and springs back to the touch
  • Remove from oven and invert on wire racks to cool completely

Whipping Cream Frosting

  • Whip all ingredients, minus the strawberries, together until thick and creamy

  • Slice strawberries into equal slices
  • First trim off the stem, and then lay the strawberry flat where the stem used to be. Cut each strawberry in half, and then each half in half again
  • Assemble the cake starting with the first layer of white cake
  • Cover the cake with a thick layer of frosting and then sliced strawberries starting from the outer edge and moving inward
  • Place frozen cheesecake upside down over the layer of strawberries
  • Cover the cheesecake with a thick layer of frosting and then sliced strawberries starting from the outer edge and moving inward
  • Finish with the second layer of white cake and repeat with frosting and strawberries
  • Allow cake to sit at room temperature for a minimum of 2 hours before serving to allow cheesecake to thaw completely

Can This Cake Keep Overnight?

Unfortunately not really. The strawberries will begin to seep until they are soggy, which will also spread to the cake.

This cake is best eaten with 6 hours of making.

How Do You Decorate a Cake with Fresh Strawberries?

There are several ways to decorate a cake with fresh strawberries.

In this strawberry cheesecake cake, I opted for freshly sliced strawberries without the stems.

You can also keep the stems on, and slice the strawberries almost to the top. By leaving the stem on, you create a fan shape when the strawberries spread out.

Another way is to slice the strawberries and douse them in sugar. After they have created a syrup, you can pour that over your cake. This method is popular with angel food cake.

Personally, I don’t like using a stand mixer for frosting. Hand beaters are so quick and easy, you can be done with the frosting in the time it takes to get all the parts attached to your mixer.
