Butter oatmeal cookies that have a toasty exterior with a chewy center and a hint of peanut butter that compliments the molasses and oats.

- ⅓ cup butter
- ½ cup coconut oil
- 1 ¼ cups brown sugar
- ½ cup white sugar
- 1 ½ teaspoons vanilla extract
- 2 eggs
- ½ teaspoon salt
- 1 teaspoon baking powder
- 1 cup old fashioned cooking oats
- 1 ¾ cups flour +/- ¼ cup
Preheat oven to Fahrenheit 350°
Cream sugars and butter together until shiny
Beat in vanilla and eggs until smooth
Stir in dry ingredients until all flour is incorporated
Bake at Fahrenheit 350° 9-11 minutes until edges are browned
Cool on wire rack or paper towel
