Finely dice mint leaves
Add to milk and cream and bring to a boil over low heat
Remove from heat and allow to steep for a minimum of one hour, covered
Strain cream through cheesecloth into a medium size bowl, squeezing to get all the flavor out
I like to add a few additional fresh diced leaves to the mixture
Add half the liquid back to the saucepan
Bring cream to a low boil
Whisk eggs, salt and sugar into the remaining liquid off heat
Slowly pour into the hot cream, stirring constantly
Cook just until the mixture begins to thicken
Remove from heat and allow to cool
Transfer to the fridge until chilled through
Churn according to manufacturer's instructions
5 minutes before churning is complete, add strawberries, or fold in after finished
