Fresh Strawberry Mint Ice Cream

The combination of strawberries and mint is a summer favorite. The taste is so delicate and clean. It’s the #1 reason why you’ll love this fresh strawberry mint ice cream.

Ingredients
  

  • 1 cup heavy whipping cream
  • ¾ cup milk
  • 2 cups cut mint leaves
  • ¾ cup sugar
  • 2 egg yolks
  • pinch salt
  • 8 oz. strawberries diced

Instructions
 

  • Finely dice mint leaves
  • Add to milk and cream and bring to a boil over low heat
  • Remove from heat and allow to steep for a minimum of one hour, covered
  • Strain cream through cheesecloth into a medium size bowl, squeezing to get all the flavor out
  • I like to add a few additional fresh diced leaves to the mixture
  • Add half the liquid back to the saucepan
  • Bring cream to a low boil
  • Whisk eggs, salt and sugar into the remaining liquid off heat
  • Slowly pour into the hot cream, stirring constantly
  • Cook just until the mixture begins to thicken
  • Remove from heat and allow to cool
  • Transfer to the fridge until chilled through
  • Churn according to manufacturer's instructions
  • 5 minutes before churning is complete, add strawberries, or fold in after finished
