Some days you just need cookies. I’m not talking about wanting cookies, I’m talking about needing cookies. If today is one of those days, then trust me, you need these butter oatmeal cookies.
Cookies are just nice. They are nice from the moment you cream the butter and sugar together, and every step that comes after. All the way from bowl, to oven, to mouth, they leave happy trails of crumbs from your fingertips to your tongue, and throughout every inch of your body as they travel to their warm resting place in your tummy.
Butter Oatmeal Cookies
These butter oatmeal cookies have a toasty exterior with a chewy center. They have a delicious texture and mouthfeel with cooked oats complimented with the wonderful molasses flavor of brown sugar.
My problem with every oatmeal cookie I’ve had previously is they are often too heavy on the flour, leaving no crispy outer rim nor chewy, buttery inside.
Well, that will not do, so today I started with butter and oatmeal and I figured the rest I would leave up to the cookie fairies.

Butter Oatmeal Cookies
Ingredients
- ⅓ cup butter
- ½ cup coconut oil
- 1 ¼ cups brown sugar
- ½ cup white sugar
- 1 ½ teaspoons vanilla extract
- 2 eggs
- ½ teaspoon salt
- 1 teaspoon baking powder
- 1 cup old fashioned cooking oats
- 1 ¾ cups flour +/- ¼ cup
Instructions
- Preheat oven to Fahrenheit 350°
- Cream sugars and butter together until shiny
- Beat in vanilla and eggs until smooth
- Stir in dry ingredients until all flour is incorporated
- Bake at Fahrenheit 350° 9-11 minutes until edges are browned
- Cool on wire rack or paper towel
Can I Use a Different Oil than Coconut for the Best Butter Oatmeal Cookies?
Yes! You can use Crisco, or margarine if that’s your jam!
