This Saint Patrick’s Day Irish Candy Potato Recipe is an old tradition originating from a Philadelphia Confectionery. It is widely believed that these tasty spuds were inspired by The Great Potato Famine in Ireland of the 1740’s in Ireland.
Combining whipped divinity and candy cream you can create your very own Irish Potato Candy. The mixture will resemble a candy fondant that can be rolled and shaped. In this recipe you will shape a 3 oz. oval tube, that looks just like a potato! Then dip the potatoes in a cocoa powder and cinnamon mixture to complete the look, with a few broken pieces of walnut to look like growth spuds.
This Irish potato candy recipe is so yummy. The center is filled with a delicious whipped egg white and dissolved sugar candy cream and is covered with more sweet powder.
When you eat these candy potatoes it’s like eating a powdered donut and getting sugar all over your face. Except better, because it’s chocolate and cinnamon!
Some Irish potato candy recipe versions use coconut cream and some use cream cheese, but the authentic and original recipe combines 3 parts divinity candy to 1 part candy cream.

Irish Candy Potatoes
Equipment
- Heavy bottomed saucepan
- Stand Mixer
- Granite or Marble Countertop
Ingredients
Divinity
- 3 cups sugar
- ½ cup light corn syrup
- ⅔ cup water
- 2 egg whites
- 1 teaspoon vanilla
Candy Cream

Cocoa Mixture
- ¼ cup ground cinnamon
- ¼ cup powdered sugar
- ½ cup cocoa powder
Instructions
Divinity
- Add sugar, syrup and water to a heavy saucepan and stir only until dissolved
- Bring to a slow rolling boil
- Cook until hard ball stage, or 270°
- While sugar mixture is cooking whip egg whites and vanilla in a large bowl to stiff peaks
- Set aside
- When sugar mixture has reached the correct temperature slowly pour into the stiff egg whites while mixer is running
- Continue to whip until the all the sugar is incorporated
- Whip for several minutes until the mixture starts to hold shape
- Pour onto greased wax paper to set
Candy Cream

Finalè
- When mixture is cool to the touch, transfer 3 parts back to a large mixing bowl
- Add 1 part candy cream
- Knead with a paddle or dough hook until smooth
- Shape into round tube shaped potatoes
- Coat in cocoa powder mixture and top with tips of broken walnuts to resemble spuds
- Keep in a cool dry place up to 1 month
