Red, White and Blue Popsicles are one of the more fun ways to show off your American spirit at a summer barbeque, party or celebration this summer. Especially when they are homemade!
If I’d let them, my kids would live off of popsicles in the summer. And since these popsicles are mostly fruit, I wouldn’t even feel bad about making that a reality. With a scant amount of sugar and loaded with whole fruit, these popsicles are a healthy treat for a hot summer day.
Red, White and Blue Popsicles

Patriotic red white and blue popsicles made with 3 layers of sherbet that are perfect for a festive celebration this summer!
Red Layer
This is the same strawberry sherbet as in my Red White and Blue USA Flag Cake. You’ll have a little extra if you make that cake that will work perfect for this recipe. Otherwise, use the adjustments in this recipe to simply make popsicles.

White Layer
The lemon sherbet is so yummy! I also tried an applesauce flavor that is so easy, and honestly I had a hard time deciding between the two. I’ll have to post some ultra delicious applesauce summer popsicles very soon!

Blue Layer
I really wanted to avoid food coloring for the blue layer, but it’s hard to make blue naturally.
If you squeeze blueberries, they end up purple. Same with blackberries. Same with acai berries. All are super yummy, but not blue. So I opted for solid blueberries.

In the future, I might just have to go with blue food coloring. Then I could make any flavor I wanted! My kids were begging for honeydew – sounds good to me!
How Many Red, White and Blue Popsicles Does This Make?
Depending on the size of your popsicle molds this may make more or less than 8 popsicles.
If you want a simple hack for making extra popsicles with extra sherbet, pour your extra liquid into a Tupperware container. When frozen slightly, add popsicle sticks and continue to freeze. When frozen, just cut out square sized chunks around the popsicle sticks!
How to Make This Recipe
Red, White and Blue Popsicles are so easy to create at home.

You’ll just need a few ingredients plus popsicle molds which you can order overnight on Amazon (see links below), or pick up at your local grocery store!
Don’t forget the popsicle sticks too! For these popsicles you won’t be able to use the reusable plastic sticks that come with the molds because you’ll need to add the sticks on the second layer to get them in right.
For the ingredients, all you have to do is throw all of your ingredients into a blender, and then pour them into the molds. With these popsicles, you’ll have to wait an hour and a half between layers, or they will mix. Once the last layer is in, leave the popsicles in the freezer overnight, and they’ll be ready the next morning!

Equipment
- Blender
- Popsicles Molds
- Popsicle Sticks
Ingredients
Strawberry Flavor
- 15 frozen strawberries
- 1 tablespoon sugar
- 1 tablespoon sour cream
- 1 tablespoon whipping cream
Lemon Flavor
- ¼ cup coconut milk
- ¼ cup coconut cream
- Juice from 2 lemons
- 1 tablespoon lemon juice
- 1 tablespoon sugar
- Core of Pineapple
Blueberry Flavor
- 3 oz whole blueberries
- 3 oz Sparkling water
- 1 teaspoon sugar
Instructions
Strawberry Flavor
- Put all ingredients in blender and mix until smooth
- Pour into popsicle molds until ⅓ to ½ full
- Freeze for minimum 1.5 hours
Lemon Flavor
- Put all ingredients in blender and mix until smooth
- Pour over red layer of popsicle until ¾ full
- Return to freezer and let chill for 15 minutes
- Place sticks in popsicle molds
- Freeze for minimum 1.5 hours
Blueberry Flavor
- Cover white layer of popsicle with as many whole blueberries as possible
- Dissolve sugar in sparkling water
- Pour over blueberries
- Freeze overnight until completely solid

For this recipe, these are the popsicle molds I used. These are on the smaller size, so depending on your party size, group, or let’s be honest, appetite – you might want to opt for a bigger size.
I do, however, love how easy they are to get out of the mold and how they come with a container that keeps them level while freezing and also doubles as a container to dip in water to loosen up for easy removal.
