I love cookies, and I especially love these White Chocolate and Almond Cookies!
Cookies are simple to make and easy to eat. You can typically make them with any amount of scant ingredients, or ingredients that you likely have in your pantry no matter what time of year it is or where you are in the world.
And these White Chocolate and Almond Cookies fit that description exactly. These cookies are perfect and super yummy anytime of year.
At Christmas the combination of white chocolate and almonds in a cookie combined with a pinch of cinnamon is always festive.
In the summer, these cookies are light and creamy but don’t take too long to bake so the house stays cool.
In the spring the white chocolate in them makes a perfect Easter treat. They can even be mixed with a few colored sprinkles to brighten them up without changing the flavor.

A perfect, soft and chewy white chocolate and almond cookie that will satisfy your sweet tooth year round.
White Chocolate and Almond Cookies
Equipment
- Cookie Sheet
Ingredients
- 1 cup butter
- 2 cups powdered sugar
- 2 eggs
- 1 teaspoon almond extract
- 2 cups flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup white chocolate chips
- 1 cup chopped almonds
Instructions
- Beat butter and sugar until light and creamy
- Add eggs and almond extract and mix until fluffy
- Stir in remaining ingredients until smooth
- Drop spoonfuls on cookie sheet
- Bake at Fahrenheit 350° for 9-11 minutes
- Transfer to wire rack or paper towel to cool
Can I Substitute a Different Type of Nuts?
The answer is always yes, but…
If you use any nut other than almonds, you will completely deviate from the flavor of this recipe. These are intentionally made with almonds and will produce the best flavor and results.
Can I Use Regular Sugar Instead of Powdered Sugar?
You can, but I love how powdered sugar creates a really delicate texture in these cookies and emphasizes the crunch of the nuts by smoothing out the batter.
