This is the ice cream you eat after the kids go to bed. Adult ice cream. This recipe for Ginger Ice Cream tastes just like your favorite ginger beer! It’s sharp enough to tickle your throat, and creamy enough to go down smooth.

Chunky or Smooth?

A lot of recipes for Ginger Ice Cream have chunks of ginger mixed in, but I didn’t want that. I just wanted an uninterrupted, smooth, cold treat that didn’t require any hard work. You know, like chewing.

Bonus: Adding Coconut milk in ice cream gives this recipe for ginger ice cream an extra inspired flavor from South Asia.

Lemon or Lime?

I really wanted to add a bit of lime to this ginger ice cream, because lime wedges go so well with ginger! So, I candied some lime rinds — except, it didn’t turn out like I wanted.

There is a reason when you google candied rinds there are only search results for orange and lemon.

Is this Only For Adults?

Absolutely not! It doesn’t have any alcohol, and in fact, it’s my 2 year old’s favorite ice cream!
